MY CLIENTS at Pahanocoy Eco Adventure Park have the occasional craving for breakfast food even when it’s the middle of the day. So I have included several breakfast-all-day items in our menu.

We're also prepping Pahanocoy for overnight accommodations so I will continue to add more usual early morning dishes to our repertoire. Tocino has been everyone's favorite. Be it pork, chicken, or fish, it will surely start the day right.

Tocino mix – 2 1/2 pouches
Pork belly – 500 g (1.10 lb.)
Chicken chunks – 500 g (1.10 lb.)
Boned Bangus - 1 piece about 300 g (10.58 oz.)
Cooking oil – 1/4 cup

Directions:

Easy method:

1. Coat the meat with Tocino mix, 1 pouch for the pork, 1 for the chicken and a half for the bangus.
2. Marinate for 30 minutes or to taste in the refrigerator.
3. Heat 1/4 cup cooking oil in a large pan and pan fry the meat few pieces at a time until meat has a shiny reddish-brown color.

Traditional method:

1. Coat the meat with Tocino mix, 1 pouch for the pork, 1 for the chicken and a half for the Bangus.
2. Marinate for 30 minutes or to taste in the refrigerator.
3. Place all the meat (one kind at time) in a large pan and cover with cold water.
4. Bring to a boil and then lower the heat, simmer until water dries up and the meat starts to sizzle.
5. Increase heat and cook until meat has a shiny reddish-brown color.
