The Iron Maiden

DURING last year's media camp, which always falls on the Holy Week, I was pretty much confined at home, recuperating from flu.

Sun.Star Baguio managing editor and then newly-installed president of the Baguio Correspondents and Broadcasters Club Roderick Osis, however, knew how to draw this Iron Maiden out of her bed and into the camp.

He texted: “Umay ka ditoy camp nu rabii. Kalding ti masida. Ilasinan ka.”

No second thoughts on that one. I was out of bed faster than I could say the word, “goat”.

The goat did not disappoint. The prexy knew to set aside kilawin for me and Dodie Mendillo (reliable cameraman of ABS-CBN), kitchen manager, immediately served it to me upon arriving at camp, complete with my sili. Now, that’s friendship down to the core.

Harley Palangchao (adopted son of the late Willy Cacdac and now with Baguio Midland Courier) celebrated his birthday recently.
Last Sunday I woke up to the text: “Maan, lunch sa bahay.”

My day was immediately made. I figured he found a goat to serve his friends. And I had a good time Sunday. Your favorite food just goes so well with good friends and laughter. Not to mention Jack Daniels.

Yes, I love goat. Childhood summers for me and my cousins on my mother’s side meant waking up to a goat being butchered right in our backyard.

Kilawin, singkutsar, kaldereta, adobo, sinampalukan, we relished these all. And learned how to prepare them, too.

Bonding with my family meant endless hours in the kitchen cooking for the whole clan and neighbors, peeling cloves of garlic, pounding no end on ginger, crying over heads of onions, taking a sip of the family brewed vinegar and cleaning banana leaves and trunks to later serve as our plates.

There is a joke that our goat dealer back in San Juan prays for the poor goat up for slaughter whenever he sees my Uncle Butch arrive at his home. “Ada man ditoyen dagitoy Soriano. Ada man matay nga kaldingen,” he is thought to say.

I actually have a scratch in the head moment whenever I meet someone who says he’s never eaten goat.

Then again, I have never been a picky eater. Blame it on the childhood summers I described above.

But when the time came to try horse meat, I was kind of hesitant. First time was with the commander Wo, who insisted we waited for Rancho at Ketchup Community to open just so he could try the resto’s famous tapang kabayo. We waited two hours. Good thing they had it and it was really good. And Wo and I we never seem to run out of things to talk about.

I don’t see recipes for goat, much more horse, on Pinterest. I believe I will receive a lot of nasty comments from a lot of animal lovers out there should I start posting pictures of tapang kabayo and singkutsar.

Pinterest is a pinboard style photo-sharing website which allows users to create and manage theme-based image collections including women’s fashion, quotes and my personal favorite, food and drink.

What I see are boards on low-fat recipes, gluten-free recipes, sugar-free recipes, fat-free recipes, diet lovers’ recipes.

When you see boards like what I mentioned, you are sure to find a board which says, “exercises for your abs”, “the ultimate workout” and all that.

Then you follow this person on Facebook you will see her post: “Two hours of cycling so I could eat a chocolate chip cookie.”
In this day and age of heightened desire of “healthy living”, it seems we have forgotten how to live.

Food, as my father has taught me, is the ultimate expression of love. He said there is nothing more fulfilling than having to cook for someone special.

Don’t get me wrong, I do believe in a balanced diet. National Nutrition Council-CAR head Ma. Eileen Bringas-Blanco in Wednesday’s launch of the revised nutritional guidelines for Filipinos said we could eat everything BUT in moderation. Always in moderation as with everything we do in life.

So enough with these crazy diet and exercise trends.
Eat. Live. Love.

The three words I stand by.

And true to these words, I will have my fill of goat again tomorrow. See you, media friends, for our post-holiday get together!
