SM names winners in culinary project

MY CITY, My SM, My Cuisine made a stop at SM City Cebu on Jan. 17. During the event, mall goers sampled some of the finest delicacies in the region as well as heirloom recipes from prominent families in the city.
A joint project of SM and the Philippine Star with support from Homeworld, My City, My SM, My Cuisine celebrates the flavors of Philippine regional cuisine through a culinary contest featuring two signature recipes from 14 cities where SM malls are located.

The cooking contest at the Event Centre showcased two of the province’s signature dishes—the humba (braised pork) for the entrée, and dessert made with masareal and/or dried mangoes.
Ma. Estella Aguirre’s masareal cheesecake for the dessert and Peter John Perez’s spicy humba pasta for the entrée were adjudged winners by the board of judges, which included food columnist Aissa de la Cruz, Chef Raki Urbina of Laguna Catering, Philippine Star’s Opalene Santos, and Metropolitan Museum of Manila vice chairperson Corazon Alvina.
Winners each received P5,000 worth of SM gift certificates and gift packs from Homeworld and dried mangoes from R&M Preserves. The non-winners received P1,000 worth of SM gift certificates and gift packs from Homeworld and dried mangoes from R&M.
Awarding the winners were Alvina, SM Prime Holdings Inc. vice president Marissa Fernan and vice president for publicity Millie Dizon.
In the afternoon, the presentation of the heirloom recipes of two prominent families in Cebu City happened at the Northwing Atrium.
A video hosted by Alvina featured Cebu’s grand dame of folk dance and ballet Luz Mancao–Sandiego, mother of choreographer Val Sandiego, making Perdes using ingredients like chicken, red onion, garlic, star anise, mallorca wine, salt, vegetable oil and egg.
Next, real estate developer Annie Osmeña–Aboitiz made Caldo Puch, which included ingredients like chicken breast and pork meat cut in strips, clams with shell, bacon, squid strips, tomato sauce, peas, cups of rice, broth from the boiled clams, shrimp, chicken bones, white onion, mashed cloves of garlic and olive oil.
