ANYONE who has shopped at the city’s malls has surely dropped by the bakery or pastry nook within the shopping complex. Some familiar items aside from the bread and cookies are the croissant and flaky turnovers.
The latter is made by placing a filling on a piece of dough, folding the dough over, and sealing it. That is probably how the filling snack got its name.
In the US, turnovers might be a big thing because it has a day set aside in its honor, particularly apple turnover, which is today, July 5.
The pastry can be sweet or savory, depending on the filling, but overall, it is as portable as a sandwich. Turnovers can be made with puff pastry or with short-crust pastry, and filled with anything you want: menudo, corned beef, pineapple, pork with cheese, ripe mango, humba, vegetable medley. chicken, strawberry, toffee, chocolate—but not all at once, dear me.
Beef with potatoes in curry sauce would give the turnover a spicy, Oriental kick.
Chicken with mushrooms can perk up the interest of a finicky eater. But for Nutrition Month, there are ways to make turnovers more healthy to the heart and veins.
This veggie turnover calls for broccoli florets, chopped; diced onions; water chestnuts, chopped; peas; carrot, diced; grated cheese; olive oil; garlic; melted butter; salt and pepper to taste; and pre-made pie crust, cut into four pieces to make four turnovers.
Cook the vegetables in olive oil and use to fill the pasty. Bake in oven, preheated to 350 degrees.
Another Nutrition Month-oriented turnover is called Mediterranean-style vegetable turnover that Food Channel shared with its viewers.
You need olive oil; onion, finely diced; garlic, crushed; one courgette or zucchini, diced (or you can use sikwa and upo); carrot, diced; red pepper, finely diced; plum tomatoes; red chili, seeds removed; ready-rolled sheet puff pastry; feta cheese, crumbled (or any cheese you like); handfuls arugula; and egg, beaten.
Cooke the onion, garlic, carrot, courgette, red pepper, tomatoes and chili in oil. Cut a disc out of the puff pastry, using a 15cm diameter plate. Transfer to a baking tray.
Spoon the cooled vegetable mixture onto one half of the pastry disc. Place the cheese and lettuce leaves on top of the pie mixture. Brush around the edges with beaten egg and fold the pastry over to make a turnover.
Crimp the edges. Brush the top of the turnover with beaten egg, making a slit in the top of the pastry so that the steam can escape while it cooks.
Bake in the center of the oven for approximately 20 minutes, or until golden. Delicious paired with leafy salad, ripe mango and four seasons.
If you really want to have meat, you can use humba but just add mushrooms and diced broccoli. The kids who don’t like vegetables will not notice the kryptonite in their food.
It’s easy to slip vegetables into the daily meal. Just find a clever way of disguising it, like using turnovers. Don’t worry, it’s going to be fun watching whether veggie haters will be none the wiser.
