PAY attention and step right in this latest “republic” in town. Here’s a food place where one’s gastronomic ideas can run wild; a restaurant that can turn taste buds into tourists for a day.

Word about this pizza joint that’s barely a month old, has spread like wildfire among this metro’s dining enthusiasts. Here at Pizza Republic Pick + Mix by Giuseppe Genco (located along Salinas Drive, cor. La Guardia St. Cebu City), the staff at the display counter who are ready to take your order just don’t do pizzas for you, they do your pizzas for you.

That’s right, you have control over the kind of 10-inch pie you want for a very reasonable price. While standing in queue, a person can already think of what kind of pizza he wants to “create.”

A custom-made Quattro Formaggi with a little spicy kick? A pie that’s loaded with nothing else but meat? Or would you prefer one that would make health-buffs salute you—a pizza with nothing else but vegetables on it?

The brand takes something as standard as pizzas, recreates the whole concept, and serves back a slice of satisfaction back at its patrons. Here’s how the process works.

Fall in line to start your “Pizza Assembly.” Choose a sauce whether red or white. Then select toppings according to your preference. The options include and are not limited to: mozarella, parmesan, gorgonzola, hungarian sausage, pepperoni, smoked bacon, turkey ham, garlic sausage, coppa ham, roasted garlic, mushrooms, olives, bacon, pineapple, etc!

When done, wait for your pizza to cook; the eating-phase is just as rewarding.

One of the best things about this place, besides having loads of quality ingredients to choose from and a modern-industrial interior that’s easy on the eye, is the fact that the pies are all done in an authentic brick oven. The wood used to stroke the flames and bring the temperatures even higher, give off that distinct flavor on the pizzas. Also, the same oven can fit to about 20 orders all at the same time and can cook for only about 10 minutes.

So the food may come really fast and hot, but Pizza Republic isn’t a typical fast food brand. “We’re not exactly a fast food place,” explains Leanza Teves, one of the restaurant’s managing partners. “I’d like to say we’re a fast-casual, fast-service restaurant.” Also, it strives to be authentic-Italian, as Leanza assures that it serves nothing but imported ingredients for all its pizzas.

Wifi and parking are not problems. Despite the place being packed during peak hours, Leanza assures that the turnover is pretty fast and as soon as one is done ordering his pizza, seats are sure to be available.

By the way, if a person is not exactly the cooking type, standard pizza recipes are available on the menu for him to choose from. Pizza Republic is open from Sunday to Thursday from 11 a.m. to 10 p.m., and from 11 a.m. to 11 p.m. on Friday and Saturday.
