IF THERE is one thing that the food industry in Davao City has observed, that is, Dabawenyos are always on the lookout for something new- not only a new concept but new flavors as well.
Pyro Davao, which is co-owned by some of Davao City's rising chef -- Bianca Garcia Dizon, Randy Panganiban, Bianca Estabillo Delgado, and Batet Pascual -- offers Dabawenyos a truly gastronomic with its fusion of cuisines and flavors.
"The concept of pyro is fusion comfort food, meaning familiar flavors but with a twist," Dizon said.
For his part, Panganiban said they made it a point not to have a specific cuisine as it will limit their creativity when it comes to creating their signature dishes.
"Because when we put a cuisine, we might be bound with that cuisine. We said let us not put up a cuisine so we can explore different flavors and combinations," he said.
Recently, I had the opportunity to try their dishes. Among them are their Pyro Fried Chicken Basket, Sticky Hoisin Ribs, Philly Bulgogi Cheese Steak sandwich, and Sisig Carbonara, all of which were really good. For their desserts, I was able to try four flavors of their ice cream, Criollo Mestizo, Thai Milk Tea, Butterbeer, and Spiced Kalabasa, which were also good.
Panganiban added that the conceptualization of each of the dishes is a combined effort among the four of them. When they have a new dish, they also put into consideration if it will be something enjoyed by the diners.
"We like to innovate flavors but we also have to keep it familiar to the diners," he said.
In the months to come, diners of Pyro can be assured of more unique gastronomic experiences as Pyro continues to innovate with their dishes.
