Wheat Germ Crunch Muffins

Ingredients
1 1/2 c Flour; all-purpose
1/2 c Wheat germ
1/2 c Sugar
1 tb Baking powder
1/2 ts Salt (optional)
1 c Milk
1/4 c Margarine, melted
1 Egg
2 tb Wheat germ

Procedure:
1. Heat oven to 400 degrees F.
2. Spray muffin tray with cooking spray.
3. Combine the flour, wheat germ, sugar, baking powder, and salt; mix well.
4. Combined the milk, margarine, and egg; mix.
5. Add to the dry ingredients and mix just until blended; don't overmix.
6. Fill the muffin cups 2/3 full.
7. Sprinkle with wheat germ.
8. Bake for 20 to 22 minutes or until a wooden pick inserted in the center comes out clean.
9. Serve warm with butter.

 

Mother's Day Apple Almond Pancakes

Ingredients
1/2 c Whole-wheat flour
1/2 c Unbleached flour
1 tb Brown sugar
1 1/2 ts Baking powder
1/4 ts Salt
2 Eggs, separated
4 tb Oil
1/2 c Buttermilk
1/2 c Apple Juice
1/4 c Chopped almonds

Procedure:
1. Combine flours, sugar, baking powder, and salt in a mixing bowl.
2. Beat egg yolks with oil, buttermilk, and apple juice.
3. Stir into flour mixture with nuts until all ingredients are moistened (do not over stir).
4. Beat egg whites until stiff and fold into batter.
5. Spoon onto a hot,greased griddle and turn once when bubbles appear.
6. Makes 8 to 10 pancakes.

 

French Toast with Brandied Lemon Butter

Ingredients:
4 Eggs
2 tb + 1 ts sugar
1/2 ts Salt1 c Whole milk
1/4 ts Vanilla extract
12 Thick slices of bread
Butter
Powdered sugar, optional

Brandied Lemon Butter:
1/2 c Butter
1 c Sugar
Juice of 2 lemons
4 ts Grated lemon rind
3 oz Brandy

Procedure:
1. In a shallow dish, beat eggs, sugar, salt, milk and vanilla.
2. Soak bread in the above mixture.
3. Heat butter over medium high heat and cook each slice of bread until slightly brown on each side.
4. Serve with brandied lemon butter and lemon slices.
5. Sprinkle with powdered sugar, if desired.

 

For Brandied Lemon Butter:

1. Melt butter over low heat.
2. Spoon off any foam that forms.
3. Pour into a dish, leaving behind any sediment in the pan.
4. Wash pan, pour butter back in the pan and add the sugar.
5. Stir constantly until sugar dissolves.
6. Add lemon juice, rind, and brandy; stir until smooth.
7. Pour over hot french toast.

 

Easy Mother's Day Breakfast Pizza

Ingredients:
6 Eggs
8 oz Mozzarella Cheese, grated
1 1/2 c Milk
1 Onion*
Salt and Pepper, to taste
1 md Green pepper, ringed
Mushrooms
1 Pizza crust
Olive oil*

Procedure:
1. Chop up 1/4 of the onion and make onion rings out of the remaing 3/4.
2. Prepare your favorite pizza crust and get ready to bake, as a regular pizza.
3. Make sure that you have a fairly high ridge, as the there is a lot of mixture, and it is fairly watery.
4. Beat eggs lightly.
5. Add mozzarella cheese, milk, onion, salt and pepper.
6. Mix gently.
7. Lightly brush olive oil over the pizza base.
8. Pour mixture over the crust.
9. Place green pepper, onion rings, and mushrooms over the top of the pizza.
10. Bake at 450 degrees F. for about 15 to 20 minutes, or until crust is brown and egg mixture is set.

 

Adobo Pasta

You'll Need
1/4 kilo DEL MONTE Spaghetti, cooked
8 cloves garlic, crushed and fried
1 small onion, sliced
400 grams pork pigue or kasim, cut into chunks
1 pc. laurel leaf
6 Tbsp. olive oil
MARINADE
1/4 cup soy sauce
1/4 cup DEL MONTE Red Cane Vinegar
1/4 tsp. pepper
8 cloves garlic, crushed

Here's How
1. MARINATE pork for 30 minutes. Drain (reserve marinade).
2. SAUTÉ garlic from marinade, the onion and prok.
3. COOK for 5 minutes.
4. ADD 1/2 - 3/4 cup water, laurel leaf and marinade.
5. SIMMER for 40 minutes or until dry and oil comes out.
6.BROWN pork in it’s own oil for 3 minutes. Flake meat.
7.COMBINE Adobo with cooked DEL MONTE spaghetti and olive oil.
8. Blend well. Top with fried garlic.

 

Creamy Fruit Surprise

You'll Need
1 Tbsp unflavored gelatin
3/4 cup evaporated milk
1/2 cup sugar
1 can (439 g) DEL MONTE Fruit Cocktail, drained (reserve syrup)
250 ml all-purpose cream, chilled

Here's How
1. DISSOLVE gelatin in 3 Tbsp. water.
2. ADD 1/4 cup fruit cocktail syrup.
3. HEAT until gelatin is dissolved.
4. STIR in milk and sugar.
5. CHILLl for 10 minutes or until mixture begins to thicken. Stir in cream.
6. ADD DEL MONTE Fiesta Fruit Cocktail.
7. POUR in individual molds.
8. COVER and chill until set. Top with red cherries as garnish.

 

Chicken Parmigiana

1/3 c dry bread crumbs
2 ts parmesan cheese -- grated
3/4 ts Italian seasoning
1/2 ts garlic powder
1 lb chicken breasts without skin
1 egg -- beaten
8 oz tomato sauce
3/4 c mozzarella cheese -- shredded

1. Combine bread crumbs, cheese, italian seasoning, and garlic powder in a shallow bowl.
2. Dip each chicken breast in beaten egg, then roll in bread crumb mixture to evenly coat.
3. Place chicken on a cookie sheet or jelly-roll pan.
4. Bake in preheated 375F oven for 10 minutes.
5. Turn chicken over; bake 10-12 minutes or until chicken is thoroughly cooked.
6. Spoon tomato sauce over chicken.
7. Sprinkle cheese over top. Bake 3 minutes or until chicken is melted.

 

Mothers Day Leg of Lamb

6 lb Leg of lamb, well trimmed
5 ea Cloves garlic*
20 ea Small sprigs fresh rosemary
20 ea Small sprigs fresh sage
1/4 c Olive oil
1 x Salt and pepper

1. Peeled and thinly sliced
2. With the point of a small, sharp knife, make thin, deep slits all over the leg of lamb;
3. Insert the garlic slivers and herb sprigs into the slits.
4. Drizzle the leg of lamb with olive oil and sprinkle with salt and pepper.
5. Let it marinade at room temperature for about 20 minutes.

Preheat oven to 425 degrees F.

1. Place the leg of lamb on a rack set in a roasting pan, and cook for one hour.
2. Remove from oven and let stand for ten minutes before carving.

 

Easy Mother's Day Beef Stroganoff

1 tb Vegetable Oil
1 lb Sirloin Steak, Boneless*
8 oz Fresh Mushrooms, Sliced
1 ea Medium Onino, Sliced
1/4 c Water
2 tb Unbleached Flour
1 ts Dry Mustard
1 ts Salt
1/4 ts Pepper
1 c Dairy Sour Cream
*Sliced into thin strips.

1. Stir oil and steak in 2-Qt casserole until beef is well coated.
2. Cover and microwave on high (100%)) until meat is no longer pink, 4 1/2 to 5 min.
3. Remove beef from casserole; reserve meat and juices.
4. Add mushrooms and onion to meat juices.
5. Cover and microwave until mushrooms are tender, 5 to 6 minutes.
6. Shake water and flour in tightly covered jar; stir into mushrooms.
7. Sprinkle with dry mustard, salt and pepper.
8. Microwave uncovered to boiling, 30 seconds. Boil until thickened, about a minute.
9. Stir in the streak strips; add the sour cream. Microwave uncovered until hot, about 1 minute.
10. Serve over hot rice or noodles (fettucine).

Sauted Salmon Steaks

4 ea Salmon Steaks
1 tb Butter
1 ts Soy sauce
1/4 ts Garlic powder
4 ea Lemon slices

1. In a large non-stick skillet, melt butter; add soy sauce and garlic powder.
2. Add salmon and cook for 4-5 minutes.
3. Turn and continue cooking 4-5 minutes more or until fish flakes easily.
4. Garnish with lemon slices.

 

Easy Mother's Day Spaghetti

1 lb Ground beef
1 ea Minced garlic
1 tb Whole basil
1 lb Can of tomatoes
2 ea 6oz. cans tomato paste
1 ea Small mushrooms
12 oz Noodle
1 ts Salt
1 c Water
Basil, oregano, etc. to taste

1. Brown ground beef and drain.
2. Add garlic, basil, tomatoes, tomato paste, and mushrooms.
3. Simmer, covered 14-20 minutes; stir often.
4. Cook noodles in salted water.

 

Mother's Day Chocolate Cake

2 c Flour; Unbleached, Sifted
1/2 c Cocoa; Baking
2 1/4 ts Baking Soda
3/4 ts Salt
3/4 c Shortening; Vegetable
1/3 c Sugar
1 1/2 c Corn Syrup; Dark
3 ea Eggs; Large, Separated
1 1/2 ts Vanilla Extract
1 c Coffee; Cooled

1. Preheat oven to 350 degrees F.
2. Sift together the flour, cocoa, baking soda and salt; set aside.
3. Cream together the shortening and sugar in a mixing bowl until light and fluffy.
4. Blend in the corn syrup and egg yolks. Beat in vanilla.
5. Add dry ingredients alternately with coffee to creamed mixture, beating well after
each addition.
6. Beat egg whites in another bowl until stiff peaks form; fold egg whites into cake batter.
7. Pour batter into a greased 13x9x 2-inch baking pan.
8. Bake for about 45 minutes or until cake tests done.
9. Cool in pan on rack.

 

Banana Chocolate Pudding Cake

3/4 c Cake flour
1/3 c Nonfat dry milk powder
1 Env. (4 svgs) chocolate pudding mix
1 ts Baking powder
4 Eggs, separated
2 tb Sugar
1/2 c Evaporated milk
1/2 ts Vanilla
1 ds Salt
1/2 c Thawed cool whip
2 md Bananas
1 tb Lemon juice

1. Preheat oven to 350. Line bottom of 8x8x2 pan with wax paper; spray sides with Pam.
2. Sift together the flour, milk powder, pudding mix, and baking powder; set aside.
3. In large mixing bowl, combine egg yolks and sugar; using electric mixer, beat 2 minutes.
4. Alternating ingredients, gradually beat in pudding mixture, and evaporated milk; add vanilla.
5. Beat a med-high til mixture is combined.
6. In separate bowl, using clean beaters, beat egg whites with salt until stiff peaks form.
7. Gently stir 1/4 of beaten egg whites into batter; carefully fold in remaining egg whites.
8. Pour batter in baking pan. Bake 25-30 minutes til cake tester comes out clean.
9. Let cake cool 5 minutes. Remove from pan. Set on wire rack to cool.
10. Remove wax paper from cooled cake;
transfer cake to serving platter and spread top with Cool Whip.
11. Peel and slice bananas; transfer slices to small bowl, add lemon juice, and toss gently.
12. Decoratively arrange banana slices over whipped topping.
13. To serve, cut cake into 9. 8 equal pieces.

 

Cappucino Pound Cake

3/4 c Oil
1/2 c Honey
4 Eggs
1/2 c Milk
1/2 c Sour cream
1 tb Creme de Cacao
1 tb Kahlua
2 c Flour
1 c Sugar
1/2 c Cocoa
2 ts Baking powder
1 ts Baking soda
1 tb Instant coffee
2 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Cloves
Coffee Kahlua Cream Glaze:
1 c Cream
1 ts Instant coffee
2 tb Sugar
1 tb Kahlua

1.Mix together the oil, honey, eggs, milk, sour cream, Creme de Cacao,
and Kahlua and beat for 4 minutes with electric mixer.
2. Mix together the flour, sugar, cocoa, baking powder, baking soda, instant
coffee, cinnamon, nutmeg, and cloves and add to wet mixture, mix well.
3. Spread into greased and floured tube pan. Bake at 325 degrees F. for 1 hour 10 minutes.

Coffee Kahlua Cream Glaze:

Beat together the cream, instant coffee, sugar, and kahlua and spread over cooled cake.

 

Funny Mother's Day Cake

1 c Sugar
1/2 c Cocoa
2/3 c Hot water
1/2 ts Vanilla
1/2 c Butter
1 c Sugar
2 ea Egg whites
2 c Flour2 ts Baking powder
3/4 c Milk
1/4 c Lemon juice
1/2 ts Vanilla

1. Preheat oven to at 350 degrees F.
2. Mix sugar, cocoa and hot water; add vanilla, mix well. Pour into 9 inch pastry shell.
3. Cream together butter and sugar; beat in egg whites till fluffy.
4. Whisk together the flour and baking powder.
5. Add milk, lemon juice, and vanilla. Add dry ingredients; beat well.
6. Spoon into the pastry shell.
7. Bake about 40 minutes.
