Speakers at Culinary Congress
The International Culinary Congress in September 22-23, at the Waterfront Cebu City Hotel will bring to Cebu renowned speakers.
A career professional in food service, chef Dennis Hipolito will talk about the topic The Career Chef.
He began his culinary education at the Culinary Institute of America, graduating in the Dean’s List in 1999. Prior to that, he studied specializing in food styling and decorating techniques in the same institute. He also took culinary instructions under culinary icons such as Delores Custer, Penk Ching, Lilia Gutierrez and Heny Sison among others.
He did externship at the Intercontinental Hotel Manila. A staunch believer in continuing education, he assisted culinary icon Betty Van Norstrand and learned advanced decorating techniques. Later on he became pastry cook at the Ritz Carlton in Chicago which was adjudged at that time as Best Hotel in North America where he had the opportunity to work closely with chef En-Ming Hsu, Gold medalist in the World Pastry Cup 2001. His culinary experience stems back in 1988 where he started as pastry assistant of The Pastry Bin, developing recipes for Penk Ching and Shen Chen. Today he is pastry consultant to the same firm.
Chef Hipolito currently is busy as consultant to food and beverage giants such as Lee Kum Kee, Unilever RFM Ice Cream and Universal Robina Corporation where he develops new recipes, styles food for advertising materials, formulates suitable sauces as ripples or toppings for ice cream, explores potential use of native snacks for ice cream inclusion, trains staff in marketing, technical services and sales as well as conducts sensory evaluations of prototype products. He also represents these companies in selected culinary demonstrations, exhibits, TV advertising and special events where his expertise is sought.
Aside from hosting the weekly TV show Gourmet Everyday, Chef Hipolito is editorial consultant to Baking Press Magazine. He also contributes to F&B World Magazine where he has a regular column.
