2nd culinary showdown highlights Kadayawan By Ana Felicia Dulay
A MEGA-culinary event to celebrate the Kadayawan Festival was an educational and fascinating experience in the world of cooking.
The 2nd Culinary Showdown sa Dabaw@Kadayawan at the Atrium level of Gaisano Mall on August 22 was a resounding success.
According to Teresa Tirona, managing director of Specialize Trade and Marketing Inc. (Stram), the competition was originally slated in May, but due to some unfortunate incidents, it was cancelled.
"It was a blessing in disguise since it was timed during the Kadayawan Festival which is a celebration of a bountiful harvest," she said in an interview. The aim of the show is to tap future instructors for the Culinary Center of Arts (CCA) in Manila.
Tirona is perhaps the only member of the Davao City Chamber of Commerce and Industry Inc. (DCCII) who is based in Manila and the woman behind the gastronomic event.
She said Dabawenyos are talented in the field of culinary arts.
Participants from all over Mindanao, as far as General Santos City and Cagayan de Oro City wore crisp white chef's uniform and competed for the Best Century Tuna Salad Recipe.
A total of seven amateur and eight professional chefs exhibited their skill and talent before the panel of judges.
Grand prize winner received P5,000 in cash plus short course at the CCA worth P5,000.
Professional bar tenders also competed for the best Drysdale Exotic Fruit Mix Drink. Winner also received a cash prize of P5,000.
Before the competition, Willie Tirona, Stram, Inc. president and DCCCII president Romeo J. Serra delivered the welcome remarks and speech during the program .
Pilar Afuang, executive director of General Santos City Chamber of Commerce and Industry, Inc. also delivered a speech while Anne Palmares, CCA marketing director gave the message of thanks. Closing remarks was delivered by Tirona of Stram.
A heart-stopping dance number presented by the popular Makabayan dancers who swinged and sashayed to a fast disco number highlighted the celebration.
CCA in Manila offers a diploma course in Culinary Arts and Technology Management, a two-year program designed to develop a student's culinary skills and competencies in planning, operation and supervision of an institutional or commercial kitchen. Students undergo actual hotel work in their apprenticeship.
CCA also offers a Certificate in Baking and Pastry Arts a one-year program designed to provide students with a strong foundation on the principle, procedures, and techniques in baking.
The course emphasizes in providing hands-on laboratory experience as well as externship training for a thorough mastery on procedures and techniques. The course prepares the students for bakeshop operation.
