Luscious summer treats from Selecta Lite

Very Rocky Road Lite Ice Cream Sandwiches
(Makes 18 servings, less 25% calories than regular ice cream sandwiches per serving)
Ingredients
36 round Dutch wafers (or 12 whole graham crackers)
1 jar (7 ounces) marshmallow crème
1 tub Selecta Lite Very Rocky Road ice cream, slightly
softened
cherries for garnish (optional)
Procedure
1. On cookie sheets, spread underside of 18 Dutch wafers with marshmallow crŠme (if using graham crackers, break into 3 pieces each to make 36 squares)
2. Freeze (Wafer/graham cracker should be side up) for 1/2 hour until toppings are hardened
3. Top ice cream with another wafer on the other end to form a sandwich
4. Press down lightly until ice cream spreads to the side of the sandwich
5. Freeze for about 1 hour, or until hard
6. Using a sharp knife, trim ice cream to edge of wafers, forming a straight side
7. Repeat with remaining sandwiches
8. Place ice cream sandwiches in freezer bags
9. Freeze until ready to serve
Double Dutch Lite Surprise
(Makes about 6 servings, less 50% calories than regular ice cream balls per serving)
Ingredients
1 tub Selecta Lite Double Dutch Ice Cream
6 tbsp. chocolate syrup
1 whole orange peel for garnish (optional)
Procedure
1. Scoop out golf ball sized balls (2 inch) of Selecta Double Dutch Lite Ice Cream.
2. Freeze until very firm
3. Dip in or pour with the chocolate syrup until coated
4. Place on a serving plate then drizzle with more chocolate syrup on top
5. Garnish with grated orange peel on top
6. Serve immediately.
