VERY few people actually go out for breakfast, but when you’re talking about Eggs Benedict, waking up early and going to A Cafe at the Crossroads Arcade in Banilad is definitely worth a try.

Three parties, all named Benedict, lay claim to the creation of the dish, but whoever is the real creator doesn’t really matter anymore, as the renowned chef Jason Hyatt and fellow chef Wade Watson have practically recreated the dish.

Originally made using an English muffin (or buttered toast, as one claimant insists), A Cafe’s Eggs Benedict uses crostini as the base of the dish. A perfectly poached egg is laid on the bread, with a slice of ham on top, over which a chive Hollandaise is poured. A side of garlicky fried potatoes comes with every order, and everything makes for a great first meal of the day.

I really don’t know if this could be considered a sandwich, but whatever it is, it is spectacularly fantastic. Seriously. And you don’t have to eat it only in the morning.

Lunchtime or even dinnertime, I’d consider one of these. Even as a midnight snack, and A Cafe was open, I’d run over and have one.

Cut into the dish with a spoon and let the runny egg yolk mix with the Hollandaise. Make sure you’ve sliced a piece of ham, too, and then pop it into your mouth, and savor the great flavors this simple dish exudes. If you want to, you can even include a piece of the crostini at the bottom.Maybe it brings you memories of the breakfast your mom used to prepare for you, with a runny fried egg and slices of ham, or maybe it gives you an air of sophistication, bringing you to the Waldorf where the original was supposedly first served. Whatever feelings you have will definitely be good.
