Crispy pata that’s gonna ‘kill you with kindness’

NOTHING is as exciting as knowing that you are going to taste crispy pata from its original creator.

Yes, you read it right!

I could only wonder what special qualities distinguished it from the others. I have tasted many crispy pata before but I had never been as excited as tasting the same viand in my whole life for the first time.

And indeed, the presentation of the Barrio Fiesta’s crispy pata alone did not disappoint.

Looking at its fine texture and enticing color as it was laid on a table before us, I could really be drooling. It did not look like a monster Crispy pata that would kill you because of its cholesterol but it just looked lovely and pleasant to the eyes. If it must kill you, then surely it’s gonna kill you with kindness just like what renowned American actress and singer Selena Gomez said in her song “Kill ‘em with kindness.” It just looked very palatable that one could not resist but try it.

Munching on the food, one could taste its rich flavor that conquer even its innermost part. It has a rich flavor from the inside out, so to speak.

Plus, it really is a “crispy” pata as you can crunch on its deliciously brittle skin. And the sauce just complimented it well.

There was no wonder why Barrio Fiesta could serve a crispy pata as delicious as it, especially that they were the ones who invented it. Now, the recipe had been passed on to their family generations.

Barrio Fiesta has provided the Filipino people with the authentic taste of true Filipino cuisine since 1952. Its founder, Sixta Evangelista Ongpauco, decided to turn her home on what was then called Highway 54 (now Epifanio de los Santos Avenue or Edsa) in Caloocan City, into the first Filipino fine dining restaurant with a menu composed of native delicacies.

In a dinner hosted by Barrio Fiesta general manager Tyrone Ongpauco, the grandson of its founder Sixta, at their only branch in Davao City, he shared some facts about the Filipino restaurant that has been established in the country for more than 60 years already.

There are wide varieties of Filipino comfort food on their menu but this time, I chose to highlight their crispy pata as tasting it was phenomenal.
