Enjoying modern Filipino plates

TASTE a different kind of Filipino cuisine as Chefs Roland and Jackie Laudico put their signature spin on beloved local dishes at UNO’s Modern Filipino Taste. UNO is located in Waterfront Cebu City Hotel and Casino.

“Ever since we became professionals in the field, our advocacy was to promote Filipino cuisine. Even if we’ve been to several food festivals, restaurants and hotels abroad, it’s always Filipino flavor that we champion,” said Chef Roland.

The buffet is fronted with a myriad of meats—Lechon Baboy, Lechon Baka, Lechon Kambing, Spicy Lechon Belly, Pinaupong Manok and Chef Roland’s personal favorite, Bacon Bagnet.

Filipino favorites get miniaturized: Balut Napoleon + Shots, Sisig Baskets, Ngohiong Cones, Sinigang Bites and Palabok Bites. Salads also get a Filipino twist with Three Kinds of Mango Salad and Seaweed Salad. Other noteworthy items on the buffet are Danggit Macaron, Sushi-noy, Kaldereta Pie and Kimchi Pinangat.

Of course, a Filipino meal would not be complete without rice. One can have sinangag or fried rice made especially for oneself at the DIY Sinangag Station. Chef Roland also created Puso Surprise, which is hanging rice filled with pork.

For desserts, Chef Jackie collaborated with the hotel’s chefs to create modern Filipino desserts such as Queso de Bola Cheesecake and Tablea Cake; traditional kakanins like Bico Balls and Pichi-pichi; and Panadera breads such as Pan de Coco, Ensaymada and Spanish Bread. One can also make his or her own halo-halo at the dessert section.
