Tasty welcome to Cebu culture

UNO’S Modern Filipino Taste continues as it puts the spotlight on Cebuano favorites by presenting Flavors of Cebu. Media guests were invited to the launch last Sept. 5 at Waterfront Cebu City Hotel and Casino where they were treated to a cooking demonstration of its latest offerings by the hotel’s executive sous chef, Tristan Encarnacion.

Chef Tristan demonstrated how to make three dishes inspired by Cebuano flavors: Danggit Flatbread with Tuyo and Tinapa; Smoked Tomato Granita and Dried Green Mangoes; and Cashew Nuts, Caramel and Vanilla Ice Cream flambeed in Tanduay Rum—a playful take on wok-fried dessert and also a favorite of hotel general manager Anders Hallden.

Hallden shared that it is the hotel’s intention to further promote Filipino food not just to hotel guests traveling from different parts of the world but also to the locals especially if they have visitors they want to entertain.

“With us being a Filipino-owned corporation, we need to do our part as well to promote the flavors, excitement and culinary scene of the Philippines,” he said. “They (guests) all found it interesting to try because you come to a new country, of course you want to try the food. But they weren’t sure where they can buy it or get it. So when they saw it here, it turned out to be a great success for us. We kept all the favorite dishes from the last promotion and then we added up with the Cebu flavors.”

Following the success of the recently concluded collaboration with Chefs Lau and Jackie Laudico, Waterfront continues to celebrate Filipino cuisine at UNO.

“When people ask foreigners about Asian food, they usually say Chinese or Thai. I want more people to know about Filipino food. I want them to come here and bring their families and friends,” said the general manager.

Aside from the mainstay roasted meats and classic entrees, the buffet also introduces the new “Wok’s on Fire” section, where one can make his own Mongolian fried rice from a wide selection of meats, seafood, vegetables, noodles and nine different sauces. “We want to create like a market atmosphere where you pick your favorite ingredients, you pick your produce from vegetables to seafood,” said Hallden.

Uno’s Modern Filipino Taste: Flavors of Cebu will run until Nov. 30.
