Filipino dishes with a twist

MINDANAWON chefs joined Knorr “Funlasang Pinoy” Year 2 Mindanao leg on August 22 at the Waterfront Insular Hotel Davao.

"Funlasang Pinoy is all about celebrating Filipino cusine. A lot of international chefs have been taking notice of Filipino cuisine. This year it is included in the top five cuisine trends globally by the National Restaurant Association (NRA) and by other trend lists too,” said Joanne Limoanco-Gendrano, executive chef of Unilever Food Solutions (UFS) – Philippines.

The NRA is a U.S.-based restaurant industry business association.

She said the competition seeks to encourage local chefs to create innovations from how we usually present and cook Filipino food.

Chef Benjie Gaviola of Kave Restaurant at the Limketkai Luxe Hotel, Cagayan de Oro; Chef Manny Ablanque of Lime and Zest Kitchen at the Watergate Hotel, Butuan City; and Chef Maria Victoria Mirasol of Solaris Pizza 'N Pasta, Davao City vied for the P100, 000 prize cash.

Gaviola prepared Lechon sisig Kilawin in Puff Pastry Shell; Ablanque made the Pork Belly Adobo with Roasted Chilis and Roasted Onion Adobo; and Mirasol served the Kare kare in Boneless Lechon Roll.

By the end of the cook-off, Gaviola and his Lechon sisig Kilawin in Puff Pastry Shell was named the Knorr “Funlasang Pinoy” Year 2 Mindanao grand winner and took home the P100, 000 prize. As part of his reward, he will be joining Luzon and Visayas champions, Chef Nikko Roa and Chef Nico Julius Joson, to the Unilever Food Solutions Chefmanship Academy to further expand their culinary knowledge and expertise.

Ablanque won the Media and Bloggers' Choice for his delicious and beautifully presented Pork Belly Adobo with Roasted Chilis and Roasted Onion Adobo.

"More than being a competition, we hope for Funlasang Pinoy to help create a better Filipino dining experience, take Filipino cuisine to brand new heights, and share it with more people -- here and abroad," said James Benedict Carreon, Managing Director of UFS Philippines in a statement.
