THIS special season can be quite stressful, especially with all the gatherings you have to prepare for, let alone finding the right recipe for family and friends. For an easy, stress-free holiday food preparation, celebrity chef Gerick Manalo, along with Beko Philippines, share this tasty, family-friendly dish.
Holiday Chicken Embotido with Maple Syrup Glaze
Ingredients:
3 lbs. ground chicken
1 large red bell pepper minced
1 large green bell pepper minced
1 large yellow onion minced
3 eggs
1 8 oz. can tomato sauce
1 cup dried apricots
1 cup minced carrots
3/4 cups sharp cheddar cheese
1 1/2 cups bread crumbs
1/4 cup olive oil
1/2 teaspoon ground black pepper
1 teaspoon salt
Procedure:
1. Using the Beko SDA Chopper, process the vegetables until minced then set aside each.
2. In a large mixing bowl, mix the ground chicken, carrots, bell peppers, onion, raisins, cheese, and tomato sauce. Mix well.
3. Pour-in the olive oil. Add the salt and pepper and mix well.
4. Put the eggs and bread crumbs in the mixture. Fold until well incorporated.
5. Wrap the mixture (around 1 to 1 1/4 cup) in aluminum foil.
6. In a steamer, arrange the embutido and steam for 45 to 60 minutes.
7. Remove the steamed embutido from the steamer. Let it cool down. You can also place it in the fridge.
8. Slice the embutido and arrange in a serving plate.
Maple Syrup Glaze:
½ cup maple syrup
¼ cup pineapple juice
2 minced shallots
½ tsp of salt
1. Add the mixture to the skillet with the shallots and boil until reduced to preferred consistency.
