Best of Davao Chocolate Crack Cake: Pink Heaven Cakes and Pastries

BY THE By the early or middle of 2018, the crack cake (also known as dream cake) became a trend in Davao City most especially that videos of it are

everywhere online.

Online pastry shops and even those with physical shops immediately began to offer these treats for the sweet tooth. You can’t blame them and their customers. No one can resist the hard solid chocolate layer that cracks after hitting with a spoon giving way to the oozing and sometimes gooey chocolate paste, mousse, and ganache layered perfectly to complement each other. Not satisfied, a generous amount of cocoa sprinkled on top seals the deal.

For the first episode of Best of Davao 2019 segment of SunStar Davao, we decided to ask fellow Dabawenyos and pastry chef and experts what Chocolate Crack Cake homegrown brand they can recommend. True enough, with the trend and the hype it had for the past months, the comment section of the poll was filled with different names and praise for the brands that they find the best-tasting.

We invited Ara Casas-Tumuran, SunStar Davao columnist; Von Estrada, owner of Confex and Co. Bakehouse, and MJ Llerena, host and blogger to be our judges for this segment.

Von Estrada:

Nakita dayon namu na dark chocolate gyud ang iyahang layer of melted chocolate so kung choice lang ganahan gyud kog dark kay siya man gyud ang nagapabalance sa lasa tapos naa pa gyud cocoa powder. Then naa pud sila surprise na durian jam na surprisingly, okay man diay sya ipartner with

chocolate.

Ara Casas-Tumuran:

The layer is dark chocolate nga dili siya pait so ma-love pud siya sa mga bata. Kini iyahang ganache, baga siya. Generous. Mao ni akong ginapangita

nga ganache level. Pero dili kaayo siya tam-is. Siguro kay na-overpower sa

durian.

MJ Llerena:

For a non-durian dessert eater like me, naganahan ko sa iyaha. So I think the same ang reaction sa uban na from Manila, from Gensan nga dili gyud tigkaon og durian.

At the end of the day, after three top Chocolate Crack Cakes were put side by side and were tasted by the judges, one stood out among the rest.

Primarily because of their durian surprise in the center that complemented the bittersweet dark chocolate, Pink Heaven Cakes and Pastries won the heart of the three judges. On top of that, they were all impressed of how the surface really lived up to its name and actually cracked when they tried

cracking it with their spoon.

All the layers, according to them, complemented each other’s taste while the solid chocolate layer was just write and was not too thick nor too thin.
