Kekert: Cebu’s first chocolate + wine pairing

INDULGING in a combination of luxury handcrafted and stone-ground chocolate by Victoria Amores and fine wines by Enio Ottaviani vineyards, ladies enjoyed the entire afternoon at Anzani. As a prelude to Mother’s Day, Cebu’s first chocolate and wine pairing was hosted by The Chocolate Bureau: Kate Anzani and Rose Amores-Hudson.

An artisan chocolatier created in 2018, Victoria Amores specializes in making small-batch bonbons using all-natural, organic and fresh ingredients to suit one’s taste. This passion to create chocolate all began at the Amores family farm in Bohol, where they grow cocoa beans. Exquisitely packed in a wooden box with 12 pieces in a 72 dark chocolate shell, the featured artisan chocolates were a combination of six flavors: Lemon, a flavor colored by the essence of lemon where the brightness of the jelly mingles with ganache infused with the uplifting zest of the fruit; Lavender, an intimate meeting of dark milk chocolate with soothing lavender; Burnt Caramel, a powerful and tangy treat, enhanced in character by charred caramel and sea salt reminiscent of the ocean breeze; Raspberry, a dark chocolate shell with the playful and powerful note of raspberry layered with mocha chocolate ganache; Gianduja, an Italian heritage with stone-ground hazelnuts and cacao married into a creamy ganache; and the electric blue “galactic” Latik, a Filipino exotic flavor of caramelized coconut milk and muscovado sugar for a rich tropical flavor.

To complement the alluring taste of chocolate, the five featured wines included the Sinfonia Brut (a Chardonnay Rubicone I.G.P. Spakling Brut), Clemente Primo (Bianco Rubicone I.G.P.), Merlot (Merlot Rubicone I.G.P.), Filare 15 (Cabernet Sauvignon Rubicone I.G.P.) and Caciara (Romagna D.O.P. Sangiovese Superiore), all presented by wine sommelier Mikel Cantini who flew in directly from Italy to gladly share his expertise on the Enio Ottaviani wine range.
