Spence: Telling tales over brunch

BRUNCH is the perfect compromise for those who like to sleep in during the day but still get to have their bacon and eggs at a later time. You add in a glass or two of mimosa—it’s a hit maker that has become a way of life. Cebuanos are all for it, given the plethora of brunch spots frequented by the locals.

Joining the scene is the recently opened restaurant Spence Cafe & Kitchen.

Founded by Diane Vestal, Spence brings a merry mix of all-day breakfast and comfort food together with cocktails and spirits to the table. The concept was born out of the idea of providing a place smack dab in the middle of Cebu Business Park for everyone and anyone: whether it’s someone who just finished a night shift; someone looking to unwind over

a cup of coffee, book in hand; family or friends who want to spend time together over food; or those who fashion a cocktail early during the day.

“Personally, I like my drinks anytime. So when you order drinks at eight, we won’t judge you,” Diane said. “I know they want to stay in a place where it has everything, whether it’s something heavy or light,” she said.

Spence offers hearty dishes, fusing Filipino and international fare served in generous portions. Some of the ones to try out include its selection of pancakes; Okonomiyaki fries, reminiscent of the notable Japanese street food; Sloppy Joe quesadilla; the homemade corned beef cooked for three hours; and the agave sriracha chicken with garlic rice and toasted veggies on the side.

Complete the experience by perusing its selection of desserts and pastries as well as its varied choices of coffee, smoothies, wines and cocktails. There’s the breakfast cocktails like the go-to brunch drink, mimosa; its signature cocktails called “In My Feelings” and “Lovely”; and signature ones like amaretto sour and the cosmopolitan.

More than indulging guests with their desire to enjoy clinking glasses with friends during the day, Spence, which was a year in the making, is Diane’s dream come true, and has every intention to provide a space that evokes total comfort day and night.
