On the wings of love

PEOPLE often have chicken wings as a snack and appetizer or even devour them as the main meat course for lunch or dinner. With that said, I guess it’s safe to say that chicken wings are more popular now than they’ve ever been. The many chicken wing restaurants that have been growing out of the city over the years is proof that this piece of white meat is dominating the food hierarchy. Chicken wings are simply so hard to resist that they instantly become everyone’s favorite. It’s only right that an International Chicken Wing Day exists because these savory eats deserve a day to be celebrated. And to commemorate this zesty day, we ask chicken wing connoisseurs what they believe makes a great wing.

“A good chicken wing should always be served piping hot and fresh. It should be crispy on the outside and juicy on the inside. I have tried making chicken wings myself, and they turned out delicious especially after a few tries to master cooking the sauces! When I’m lazy, using french fry powder flavoring to coat the chicken wing is the best way to make lazy flavoring at home! The good thing is that restaurants serving unlimited wings are really popular now. They let you choose from a dozen flavors to find your favorite ones and choose the level of spice too. Unlike before when we had to just rely on gravy to moisten those dry fast food wings.”

“People say it’s hard to screw up fried chicken, but I think buffalo wings are a different ballgame. I always go for well-seasoned wings regardless of bone-to-meat ratio. A great wing should also have just the right blend of crunch and chew when you bite into the skin. Finally, as a lover of Cajun, I appreciate a plateful of wings that packs a Louisianan punch. I love Cajun wings because the spices are nuanced and the flavor is elevated compared to your usual garlic Parmesan or BBQ. Not dumping on other flavors, though! Different folks, different strokes.”

“The primary thing to consider is how the wing itself is cooked. There are countless sauce variations to enhance the flavor of the chicken depending on preference, but once you fail to cook your main ingredient (which is the chicken wing) right, then you are doomed.”

“Nothing beats a wing that’s crispy, tasty and spicy! The sound of a crunchy wing is so satisfying, and I love it when it’s juicy and soft on the inside. The next best thing about a good wing is the flavor and the sauce like soy garlic, barbecue and spicy. Lastly, what’s a good wing without a little heat? Although I can’t really tolerate spicy food, I gotta admit that wings taste better when they’re a bit spicy!”

5. Geil Carreon, 29

“The wing is one of my favorite parts in a chicken along with the leg. For me, a great wing consists of a good crunch and delicious sauce. I want the chicken wing to be perfectly fried and freshly made so it’s still juicy and crispy when I eat it. The batter should be perfectly seasoned as well, not too salty so I can still dip it with sauce. I like to try different sauces, especially those that I haven’t tried before. Some of the new ones I tried are surprisingly good and instantly became a new favorite.”

“If you were to ask me one thing I could eat for the rest of my life, that would be wings. There’s just something about wings, that even when it’s bad it’s good. I’m looking for a crunchy outside with a tender inside cooked all the way through—and the sauceee, don’t forget the sauce!”
