Pacete: Adobo Festival in Silay City

“WHAT is more Pinoy than adobo? We all have to admit that at one time or another, adobo has been a face-saver at the table especially when unexpected guests arrive,” said Lynell Gaston, the lady behind Silay Adobo Festival.

Adobo Festival in Silay started in 1998 and this is now on its 20th year. The venue of the “adobo fiesta” is at Casa Gamboa (Aguinaldo Gamboa Heritage House) at the corner of Jose Rizal – Jose Locsin streets in Silay. The “vamos a comer” will be on November 9, 2019. The point persons are Ian Valladarez (wire artist) and Edsie Valladarez (lady-in-charge of Balay Negrense Museum).

On top of this is Lyn Gamboa of Negros Cultural Foundation, Inc. with her friend Cristina Montelibano, a lady who can best describe adobo from the aroma of simmering vinegar and soy sauce wafting through the corridors.

The highlight of the event is the adobo competition that will start at 9 o’clock in the morning and it will be participated by 20 best adobo ‘cocineros’ (cooks). The organizers have invited all officials from the province, cities and towns ... also those from the barangays, academe, religious groups, tourism industry, and business sector.

Different adobo recipes will be featured for sale, to be eaten at the food court or to be taken out (to go). We can ‘expect’ for adobado, chicken-pork adobo, eggplant adobo, adobong mascara ng baboy, mixed vegetable adobo, adobong lukos, adobong takway, adobong pedada, adobong alimasag, adobong tahong, adobo salad, and more.

Yours truly has been invited to give free lecture on “Lutong–Bahay Adobo at Iba Pa” (sinigang, sawsawan, chicken inasal ni nanay, Chinese-Spanish food in Silay, laswa-obrero and pinamalhan sa hacienda). Gerle Hilado- Sulmaca, Silay Tourism Officer, will introduce to the young generation the vanishing hometown delicacies of Silay. Our lecture will start at 2 o’clock in the afternoon at the sala of Casa Gamboa.

Morning activities starting at 8 a.m. include Zumba de Silay, performances of Kaanyag Dance Group with WNU-STI Rondalla and Dona Montserrat Lopez Memorial High School Special Program in the Arts Music Club and Theater Group. At 2 p.m., San Diego Parish Theater Group and Don E. Elementary School will have also their cultural presentation to be followed by parlor games sponsored by Betty Bantog Benitez Foundation. Watch also (4 p.m. to 7 p.m.) for Banda-Musika.

The last-but-not-the-least presentation is a unique bridal gown fashion show by the Entrepreneurial Eco Artists of Negros Island in cooperation with SK federation of Silay. Mabuhay si Adobo! Sa Silay, siya ang paborito!
