Brunching at Mimosas

CEBU is no stranger to brunch spots as Cebuanos understand that besides the fancy ring to them, there is that comfort knowing that one can get up late and still be able to eat breakfast, armed with a cocktail or two in hand.

With the brunch culture on the rise, places like these are not only welcomed; They’re embraced. It’s no surprise then if people wind up at the newest brunch spot located on A.S. Fortuna St., Mandaue City, Cebu called Mimosas: Brunch x Bevvies.

It opened recently and was founded by sisters Nicole Ann and Nivea Noreen Ann Cambal, who have long thought up of the idea two years ago. With the family dabbling in businesses like auto parts and services as well as construction, they both also wanted to start a business that’s something for themselves while at the same time creating a space that serves brunch just the way they like it. Creating the restaurant was mostly inspired by the sisters’ travels. This includes the dishes on the menu, which are a mix of European-inspired fare.

The place promises no-nonsense, straightforward hearty dishes and drinks. Enjoy longtime brunch favorites from different kinds of omelettes, chicken and waffles, mushrooms on toast; to those rarely found in the city like shakshuka, made with tomatoes, eggs and sausage. It also serves pastas and mains like sous vide short-rib ends, salmon ala plancha and roast lamb, to name a few. Pair these with a varied selection of tea, coffee and different variations of mimosa. Also pretty soon, diners can indulge themselves with a Cebu-inspired mimosa reminiscent of the tropics.

With Franz Ivan Dy as its chef and consultant, the restaurant’s menu is crafted with a “quality over quantity” mindset, and the firm belief to stick to the fundamentals and not changing the classics too much. The same goes for its drinks: Two to four ingredients maximum per drink (excluding the ice and water, of course).

Understanding how brunch and all that comes with it can be intimidating to some, interior-wise, the concept of the space was created like a garden in contemporary fashion, making one feel like he is in a different place. At the same time, it doesn’t possess a look that’s too polished. Anyone who would step inside would feel comfortable, which is the point of brunch in the first place.

Mimosas: Brunch x Bevvies is located at Oakridge IT Center 1, Oakridge Business Park, A.S. Fortuna St., Mandaue City, Cebu and is open from 7 a.m. to 11 p.m. from Tuesday to Sunday.
