Mindful brunch

CRIMSON Resort and Spa Mactan offers brunch with a unique style called Sunday Brunch Club. Launched last Jan. 5, this newly introduced concept veers away from the usual.

“We wanted to get away from the standard Sunday Brunches which are dominantly buffet brunches. With our new Sunday brunch, we added a more personal and creative touch offering small Tapa style plates, concentrating on flavors and presentations, great for families or a group of friends to spend a lazy Sunday afternoon at Crimson Resort and Spa,” shared executive chef Andrew Simpson.

Guests are welcomed with a glass of mimosa, gently easing one into the brunch, while taking the time checking out its three main sections—starters, mains and desserts.

Look forward to starters like gambas, confit cherry tomatoes and feta cheese bruschetta and eggs benedict; mains like slow roasted Angus ribeye, pan roasted salmon and Thai green chicken curry; and desserts like orange and cardamom tart, apple and cinnamon tarte tatin and dark chocolate and passion fruit mousse, to name a few.

Pair it with the choice of free flowing chilled juices, beer and wine.

This dining style is not only something that is unique—given how most go for the buffet route—it is beneficial for many reasons including the fact that it promotes mindful eating. Guests can really think through on their choices, at the same time keeping in mind their dietary restrictions, by pouring over the selection of dishes. Served in small plates, it not only adds a more refined touch but also brings in the promise of serving freshly made dishes every time as well as lessening food waste.

Finally, it gives its guests more time to sit back with their companions. “Guests are able to enjoy a lazy afternoon when dining during Sunday brunch. The service style also encourages interaction between guests, the hotel talents and among guests. The menu is for guests to choose to add a very personal and customized approach,” added chef Simpson.

Sunday Brunch Club is available every Sunday and open for in-house guests, walk-in guests and day users from 12 noon until 2:30 p.m at the resort’s all-day dining restaurant, Saffron Café located on the ground level.
