The glorious story of Inglorious Cookies

ON THE topic of cookies in Cebu, the first name that probably comes to mind is Inglorious Cookies. Contrary to its name, every bite of its gourmet cookies is undeniably glorious. But before it became the cult-favorite that it is now, it was once a simple hobby of a passionate baker.

Ann Sia, although having no culinary background, had always been passionate about baking. She baked frequently, sharing her creations to friends and family without any intention of making a profit out of it. Until one friend made a special request and she gladly obliged—that’s when it all started and the rest is history.

It was in 2018 when she took the big leap to share her cookies to the rest of Cebu. Since she had yet to have her own electric mixer, she made the cookie dough by hand during the first four to five months. Ann also had to learn the ropes of the business side of things, as she soon realized that it wasn’t as simple as merely baking and selling.

The witty name came serendipitously. One afternoon, Ann asked her husband Pablo for potential names for the business. Pablo, an avid Quentin Tarantino fan, had finished watching “Inglourious Basterds” just minutes before Ann popped the question. Pablo didn’t skip a beat to reply, “Why not call it ‘Inglorious?’”

Initially, Inglorious Cookies was operating exclusively online and taking advance orders until Ann received an invitation to join a seasonal bazaar in a mall in Cebu and bring her products closer to customers, both old and new. In the most perfect timing, another opportunity came just as the bazaar was coming to an end. Ann found a new home for Inglorious Cookies—this time, a permanent one—in AyalaMalls Central Bloc, which was just fresh from its opening. Late last year, Inglorious Cookies officially opened its new shop and boulangerie.

As of now, Inglorious has 17 cookie flavors, which include a mix of mainstays like the famous walnut chocolate chip Aldo, the New York-style chocolate chip Yankee, along with the regular-sized variants like The Classic and Nutella Bomb, as well as seasonal off-the-menu offerings.

There are already quite a lot of cookie businesses in Cebu, but Inglorious doesn’t dwell too much on one-upping competition. “We don’t really strive to stand out. Our aim has always been to make food that we believe in. To us, it is a huge blessing and bonus that our customers appreciate the cookies just as much as we do,” Ann said.

It’s only been two years since Inglorious started, but it has already become a hit among the discerning crowd of Cebu and beyond. Last year, Inglorious Cookies was included in Tough Cookie Critic’s 10 Best Cookies of 2019 round-up for the website Manila Eat Up.

For the future, as uncertain as these times are, Ann has exciting plans for Inglorious Cookies: improved customer service, a bigger and better shop, and of course, new treats for all the cookie monsters out there to try.

Inglorious Cookies is located in the Trading Bloc, located on the second floor of AyalaMalls Central Bloc in Cebu IT Park. Shop hours are Monday to Friday, 10 a.m. to 7 p.m.
