IN ANTICIPATION of the 500th anniversary this April 27, 2021 of the victory of Lapu-Lapu over Magellan, Waterfront Airport Hotel and Casino launched the first-ever virtual restaurant with a menu from its virtual gastronomical storybook, “Heritage.”

“‘Heritage’ is Waterfront Mactan’s retelling of the stories of Filipinos through food. We showcase the different techniques and recipes of the different and diverse regions of the Philippines,” said Tristan Encarnacion, the hotel’s executive chef.

Since “Heritage” is a storybook, it will have different chapters “highlighting different facets of Filipino cuisine in each.”

“The whole storyline will revolve around Filipino culture and stories but presented through food,” Encarnacion said.

The first chapter of “Heritage” is entitled Lasa. Among the offerings are sisig-stuffed lechon belly, seafood inasal, crispy binagoongang baboy sa gata and balbacua. “Heritage” will also have a chapter devoted to recipes of prominent individuals. And in “Heritage,” the new virtual dining outlet, the menu items and the ordering system are all done online.

“At Waterfront Mactan, our guests always come first. In the new normal, we understand that there are still a great lot of people who are wary to go out of their houses, unless it’s very essential. That is why we bring the hotel experience straight to their homes. The ‘Heritage’ menu will be available on our website and social media accounts and our customers can message us on social media or call us directly for their orders,” shared hotel manager BenHur Caballes.

Food and beverage manager April Pinay added: “Our customers will have to call or message us at least one day in advance to guarantee the freshness of their orders. We store a limited amount of stocks in our pantry to ensure high quality of food when it is picked up or delivered. Customers can shoot a message to ‘Heritage’ through Waterfront’s Facebook page or Instagram @heritage.waterfront, or ring us at (032) 340-4888 from 7 a.m. to 10 p.m., to place your orders and note the schedule for pick-up or delivery.”
