Khok: Plantito adobo

Hello, fellow lockdown friends, new normal celebrators, mask and face shield observers, and plant lovers.

I found several funny pandemic-themed videos on YouTube, particularly the MadLipz Bisaya versions. Check them out.

This is not to say we’re making light of this terrible pestilence. We’re not. But when our life seems to be dominated by everything Covid-19, we need a break. Laughter can give us that safe breathing space.

As for plant lovers, your Uncle “Plantito” Ober wants to share with you Plantito Adobo.

ADOBONG OKRA.

Based on the name, you know it’s plant-based. You need about 1/4 kg young okra. You can use more, if you like. Just wash it. No need to stem it. Have on hand 1/4 kg lean ground pork and, all according to taste, minced garlic, chopped bulb onions, vinegar, soy sauce, oyster sauce and sugar.

For a more intense flavor, add salt, minced green bell pepper, white pepper or minced chili pepper.

PROCEDURE.

Blanch okra for a minute. Set aside. Saute onions, garlic and ground pork until it loses its pink color.

Drain off liquid before adding soy and oyster sauces, and white pepper. Simmer, then add vinegar, but don’t stir for a minute to allow the acidic smell to evaporate.

Add blanched okra and toss gently. Adjust seasoning.

This dish pairs well with fried fish and cucumber salad.

To make the salad, wash three medium size cucumbers, and partially peel to form green stripes. Cut lengthwise, remove the pulp, and slice thinly.

Don’t drown the salad in dressing. You only need a small amount. Mix 1/2 cup vinegar, salt and sugar to taste. Add a bit of the dressing before serving. Adjust dressing as needed.
