Taste Pampanga's version of calamansi muffin from Likha ni Tine

HAVE you been missing the sweet-sour tasting calamansi muffin from Boracay Island?

You need not go that far anymore because Pampanga has its own version of the famous calamansi muffin.

The popular fruit-flavored muffin is a personal favorite of Kristine Joanne Gomez, A station officer from a big airline company.

Since the pandemic has forced the industry she works for to a pause, Gomez found the time to finally do what she really wanted. Thus, giving birth to her online business, Likha ni Tine.

"Likha Ni Tine is my passion project for 2020. I started in June amidst the pandemic, to finally pursue what I really love, had the time to bake my heart out and for everyone have a taste of quality baked goods," Gomez said.

When she started baking, she decided to make her own version of her personal favorite, Boracay's calamansi muffin.

And her version of calamansi muffin became an instant hit.

From her family and friends to strangers who learned about her creation by word of mouth, Leyes received a lot of orders.

"I was overwhelmed with the number of orders I got," she shared.

Her baked creations even reached friends and clients in Manila.

"With the help of my friends, I was able to send out orders to Manila clients," Gomez said.

Aside from her calamansi muffin, Gomez also makes carrot walnut muffins, banana muffins, oatmeal cookies, and chocolate chip cookies.

"I make it a point to incorporate vegetables or fruits to my creations because I wanted my baked goodies to become health alternatives," she said.

Her only sinful creation, the chocolate chip cookies, are made with

imported chocolates from the US.

"Whenever I get orders, I bake them a day before, so customers are assured of the flavor and freshness of my products," Gomez said.

Gomez gives credit to everyone who supported her passion project including her friends especially Mac and Wenna, her sisters especially Ate Karsy and Ina, her husband and son, her parents, and aunts.

"My whole family showed overwhelming love and support to my passion project, and they never doubted my skills to make it," she said.
