HOT, savory, crunchy and just bursting with umami, birria tacos have been making waves all over the internet and have found their way to the shores of Cebu.

Birria tacos are a traditional Mexican delicacy made with slow-cooked, tender beef, piled high onto a tortilla dipped in the beef’s very own consommé. It’s then fried on a griddle until it’s crunchy on the outside yet chewy on the inside.

Charmine Go, a 25-year-old chef, has turned her cravings into a business. One of her brands is Pinche Taqueria, through which she sells birria tacos.

“After we were able to limit the doughnut orders, we moved to tacos. We were actually the first to bring the birria tacos to Cebu!”

Staying true to the tacos’ authenticity, Charmine only uses Mexican ingredients and even imports the chilis.

After being constantly sold-out an hour after releasing their order forms every Sunday, Charmine and her business partner Joko Rojo opened a taco stall in February 2021.

Pinche, a pandemic baby and sister company of Lai Cha, is located at Yello Cube Food Hub.

Together with her brother Bryce, they make mouthwatering tacos. Recently, they tried their hand at making sushi tacos.

Alongside its birria tacos, Pinche also serves burritos, quesadillas, rice bowls and other taco flavors like pork carnitas, Baja fish, Cajun shrimp and cauliflower.
