IN RECENT years, you’ll be amazed how eateries have mushroomed throughout the city. From famous fast food chains to posh dining experience to unique homegrown cafes and restos. I’d like to think that people are spending more on food. Dining out with family or friends at least once a week has become a part of one’s social life. People are eating more but they are also eating wise.

What used to satisfy our palate with simple menus from local restaurants isn’t just enough nowadays. While a few restaurants we have loved from our younger years opted to shut down, others have remained steadfast, innovating what they have to offer from food taste to food presentation.

Looking into successful establishments in the food industry, having a plate filled with a mouth-watering dish presented with remarkable culinary artistry is not a sure ticket to a successful food business. Foodies are looking for more extraordinary dining experience and most retaurateurs are keen on meeting these growing demands. Adolfo Aran Jr.

He is a Food Entrepreneur, a Management Consultant for Restaurants, a Sought-After Trainer in the Food Service and Hospitality Industry, and a Food Journalist all rolled into one. He is currently the president of his 13-year old management firm, Courage Asia and a Faculty Member of the Entrepreneurs School for Asia.

He was formerly the General Manager of Super Sumo Sam Foods Inc., the former President of Food and Hospitality Events Specialist Inc., and the former Faculty Member of Enderun Colleges and the former Chief Marketing Officer/Asst. VP of the PHNMA Education Network. He is a firm believer that the time of the Filipino cuisine to be globally accepted has finally come. A staunch advocate of Filipino entrepreneurship, he is a graduate of the University of the Philippines, married with 2 sons, to whom he constantly tries to pass on the love for cooking and the passion for great food.

Chef Josh Boutwood

He is the Bistro Group of Restaurants new corporate chief who won several awards at the recently concluded 3rd Philippine Culinary Cup. The 25-year-old Filipino-British chef bested hundreds of participants from the Philippines and around the world. He wowed the international judges with his entries and bagged three gold, two silver and two bronze medals. Born to parents who are both restaurateurs, Chef Josh started dabbling in European cuisine at the young age of 12.

In 2010, he returned to the Philippines and settled in the pristine environs of Boracay where he put up Restaurant Alchemy. He then joined Bistro Group of Restaurants initially as a consultant and was appointed corporate chef early this year. He has recently introduced the delectable Black Pizza, Sesame Teriyaki Chicken Wings, Fully-loaded Sweet Potato Skins and Small Plates in Village Tavern, one of Bistro's newer concepts.

Amor Maclang

She leads GeiserMaclang, an internationally awarded full-service marketing communications company, that steers leading names in a diverse field of industries, including number 1 and number 2 brands in real estate, lifestyle (travel, food, fashion) pharmaceuticals, banking, telecommunications, and fast moving consumer goods.

Her 360-integrated marketing campaigns have garnered credit locally including PRSP's Anvil Award, IABC's Quill Awards and UA & P's Tambuli Awards and the International Business Awards (Stevies) in the international arena among others. One of her more notable campaign is the Toblerone National Thank You Day campaign, which earned international recognition, it being the first win in Asia Pacific and its strategy adopted in other countries.

Her many roles also extend to being a steward of art, as she considers this as a discipline that lends dimension to her products and campaigns.

Homer Nievera

He is a digital entrepreneur, a strategist and a tech visionary. Homer, also known as "Homerun", has a knack of flipping tech businesses and creating strategies that up revenues and valuations of companies. He helped do this at both Friendster and Multiply when he headed global revenue strategy and advertising operations for both sites - the only Filipino to hold such important global posts for US and Silicon Valley-type firms.
Homer currently heads two venture development companies in the Philippines that build and manage niche content sites. He also manages his startup blog Negosentro.com and is the publisher of FoodFindsAsia.com, a magazine-styled blog for the food service industry in the Philippines.

Roy Quejada

He has over 20 years of experience in the food industry as restaurant manager, area manager, operations manager, training consultant and now as Chief Operating Officer.

A career and family man, Quejada is a key driving force behind the transformation and improvement of Yellow Cab's operations. He oversees it's operations of almost a hundred branches here and abroad. Under his watch, training procedures of employees were standardized and diagnostic tools that help determine solutions to management and training issues were provided.

When it comes to people management, he clearly values relationship, with a commitment to build, nurture and strengthen ties within the company - among bosses, colleagues, and subordinates - and, externally, with its partners and stakeholders.
