U.S. Ambassador to the Philippines MaryKay Carlson on May 15 hosted the launch of the U.S. Poultry Adobo Collection cookbook, authored by “Adobo Queen” Chef Nancy Reyes-Lumen. The cookbook celebrates adobo, one of the Philippines’ most iconic dishes, while highlighting the quality and versatility of U.S. poultry products.


“The U.S. Poultry Adobo Collection is a symbol of the close bond between the United States and the Philippines and our shared love for food — as friends, partners, allies, and foodies,” Carlson said during the event, which was attended by chefs and representatives from the local retail, food service, and food processing sectors.


“I thank Chef Nancy Reyes-Lumen for contributing her expertise and passion for adobo to bring authenticity and creativity to this collection,” Carlson added.


Supported by the U.S. Department of Agriculture’s Foreign Agricultural Service in Manila, the USA Poultry and Egg Export Council (USAPEEC), and the United Soybean Board, the cookbook features more than 20 adobo and sauce recipes. These include both traditional Filipino regional styles and modern takes using U.S. chicken, duck, and turkey available in the local market.


Limited copies will be distributed to restaurateurs, importers, and industry representatives at promotional events. Select recipes — such as U.S. Chicken Adobo Pastil and U.S. Chicken Adobo sa Kamatis — will be shared on USAPEEC’s Facebook page: facebook.com/USAPEECPHL.


“Adobo isn’t about right or wrong — it’s about heart, patience, and flavor. Use your hands, trust your taste, and let time do its work. With premium quality U.S. poultry, your adobo can be rich, meaty, and proudly yours. Own your recipe, cook it slow, and let the love simmer through,” Reyes-Lumen said.


One of her featured creations is U.S. Chicken BBQ-Adobo with Adobo Glaze, combining traditional Filipino flavors with U.S. poultry.


The Philippines is the seventh-largest market for U.S. poultry worldwide and the largest in Southeast Asia. U.S. poultry exports to the country more than tripled over the past decade, reaching nearly PHP10.6 billion (about $190 million) in 2024. The growth is driven by rising demand in the retail, food service, and food processing sectors, as well as a young and rapidly expanding population. PR
