All about the broth

AS ramen shops are almost a dime a dozen now in Cebu, any of them can idly claim to be the best. Here comes a new player in town hoping to earn that title by serving up its specialty, the Hakata ramen.

Originating from Kyushu Province in Hakata, Japan, the Hakata or tonkotsu ramen at Ikkousha Ramen is made from pork bones simmered down to a thick and creamy, off-white broth. The bubbles on a bowl of tonkotsu ramen are indicative of its authenticity.

There are other items on the menu include homemade gyoza filled with pork and onions, and fried chicken with Ikkousha’s secret blend of spices.

Its other claim to fame? Seats for solo diners so one can slurp away without judgment. And as customers are given order forms to fill out, they can choose the noodle texture, saltiness, level of spiciness, and whatever extra topping they like.

Ikkousha Ramen has 14 branches in Japan, 36 in China, Singapore, Taiwan, USA and Australia, and one in the Philippines. Ikkousha Ramen is located on the lower ground floor of JY Square Mall, Cebu City.
