WE'VE recently welcomed the year of the pig. While this year generally speaks of good fortune and whatnot, the carnivores (pork eaters especially) rejoice at the thought of many gastronomic innovations that could possibly happen this year. But of course, the pork dishes we've grown to love over the years still remain our favorite.
