Quarantine desserts

IT’S Day 19 of Davao City’s partial lockdown. If you’ve been following the government’s request to stay at home except for very important errands, chances are you’ve already tried TikTok, read a bunch of books, or bingewatched a couple of Netflix movies and series.

Still, others have taken their boredom to the kitchen and ventured into some culinary adventures. Of course, the Dalgona Coffee (of different versions and look) had been circulating online. For the past few days, friends on Facebook had uploaded photos of their very own Dalgona Coffee.

To help further ease up your boredom, we’ve come up with other recipes found online that is also as easy and enjoyable as Dalgona Coffee:

1. Coconut Mango Sago (taken from Alan Marchetti)

Ingredients:

6 tbsp tapioca pearls (sago)

2 whole mangoes

400 ml coconut milk

salt

2 tbsp muscovado sugar

calamansi or lime

Process:

*Boil tapioca pearls until soft and chewy consistency

*Place muscovado sugar in a mortar and pestle and reduce it in powder

*Add little salt to your coconut milk, muscovado sugar, and lime juice. Mix well.

*Place your tapioca pearls in the glass, then the mango cubes and top it up with coconut milk

*Refrigerate for 2 to 3 hours. After that, stir it well and enjoy.

2. Home-made chocolate pie (taken from Ton Ton Soguilon)

Ingredients:

Loaf bread

Bread crumbs

Egg

Chocolates

Cooking oil for frying

Process:

*Make a sandwich using two slices of bread and your chocolate of choice in the center.

*Get a molder and cut sandwich into a circle

*Take the molded round bread, dip into the beaten egg, and dip into the breadcrumbs

*Fry and enjoy!

3. Cheesecake ice cream cake (taken from Angeh Maglinte, Quarantine Tribute Tips FB group)

Ingredients:

Lemon Square Cheesecake (10 pcs)

All Purpose Cream 500ml (chill before using)

Condensed milk (300 ml)

Melted unsalted butter, ¼ cup

Grated Cheese, ½ cup

Process:

*Shred your Lemon Square cheesecake until they’re very small and almost powdery. Set aside

*Whisk chilled all-purpose cream

*Mix in condensed milk in the cream and whisk well.

*Mix in the grated cheese. Set aside.

*Fold in melted butter in the shred cheesecake. Mix well.

*Arrange the butter-cheesecake mixture as first layer in a rectangular container.

*Put in condensed milk-cream mixture as second layer.

*Alternate the two mixture for third, fourth layers and so on.

*Top with grated cheese.

*Chill for a few hours or until it hardens. Enjoy!
